Stainless wheels

Hi all
Im thinking of getting my wheels done
Stainless spokes / and rims
I have got some hubs the front one looks ok
The back one looks ok as well but on the bike the back has gone oval judging from how it braking
Would the wheel rebuilder check for this

Pin,
I have in the past had a builder skim the rear hub for me after rebuild, tension and truing.
The action of tensioning can distort a hub hence they like to do it built up, but it requires a big lathe I guess!
Sometimes the shoes themselves are not chamfered (use a file) or centred (check the brake shoe cam isn't worn on one side) and that can give odd braking sensations.
