I’m in the UK just outside Portsmouth on 5he south coast...
Bought a GT380 having had a n7mber of two strokes in my youth many years ago now. It’s had work done previously probably 20 years ago...

If you decide not to coat the tank I suggest to protect your engine and carbs fit an in-line filter. This will prevent crap blocking the jets and save you having to strip them so much. I tried cheap ones without success but on recommendation bought Suzuki Bandit ones from Robinsons Foundry and they were 100% effective.
