Thermostat 750J

Good evening!
For a while I am a member of this forum. This year I have take over my dad's 380 M and couple months ago I been a owner of a 750J!
I have a question of the cooling system of the watercooled triple.
Before rebuilding the temperature gauge showed middle to right side of the gauge. But that was when running with clogged pilot jets in September.
Now the engine is back in the cattle. No really cleaning of carburettors was needed, timing perfect as specs.
I test ride it multli times and be fine so far. But even after riding 30 minutes on 50 mph roads, the temperature gauges showed only first line.
When taking care of the engine I have looked at the thermostat and first looks okay. Also refreshed the coolant and all passages look clean.
I know it is been cold right now (5-9 degrees Celsius). Is it normal that the engine doesn't get to +- 90 degrees temperature (+- middle of gauge)? Or is there something with the thermostat (I think there is only one option to mount it in the head).
I have read here that the thermostat rarely fail. The engine still need to ride carefully to fully break-in.
